Dad’s Spaghetti Soup

This is a sumptuous, very robust tomato soup. Sauteed onions and garlic give a flavorful base and ground beef adds richness. A bit of corn finishes it with a fresh sweetness.

Ingredients

  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 2 (14.5 ounce) cans peeled and diced tomatoes with juice
  • 1 (15.25 ounce) can whole kernel corn
  • 1/2 pound uncooked spaghetti
  • 8 cups water
  • Recipe Instructions

    1. In a large pot over medium high heat, add the ground beef and saute for 5 to 10 minutes, or until well browned. Add the onion and garlic and saute for 2 more minutes.
    2. Then add the tomatoes, corn and water. Bring to a boil and add the spaghetti. Reduce heat to medium low and simmer for 15 minutes, or until the spaghetti is tender.
